Somehow I missed your question on the availability of anhydrous nickel formate.
After a quick google search, I found that the dihydrate is commercially available, e.g. from Alfa Aesar. It can also be easily prepared, see among others this paper:
Arnáiz, Francisco J. "Microscale Preparation of Nickel Formate Dihydrate: A Simple Experiment for the Freshman Lab." Journal of Chemical Education 72, no. 10 (1995): A200
As for making the anhydrous salt, I found this free article, with some useful information:
Qusti, A. H., A. A. Samarkandy, S. Al-Thabaiti, and E. H. M. Diefallah. "The kinetics of thermal decomposition of nickel formate dihydrate in air." JKAU: Sci 9 (1997): 77-81
as well as a plethora of related paper titles.
I did all this at home, with really limited access to literature. I am certain, though, that a more thorough literature search will yield more relevant and useful results.
